I have some peppered bacon baking in the oven. It will most likely pair up with over easy eggs and home fried potatoes made from the leftover boiled potatoes from earlier in the week....oh, and toasted ciabatta since I picked up a loaf of our favorite bread at the farm market yesterday.

I'm the only one up and moving, well, no...that's not entirely true. I just heard the shower so someone else must have been awakened by the fantastic fragrance of bacon cooking. No alarm clock needed.

Eggs from brown chickens.....

Nothing more, just the particular chicken. Yet people pay more for those than the regular, everyday white variety. Now, if they were double yolkers...well, then I coul understand.

But your pic is gorgeous, Barb. Nice that you go out in the heat just to give us beautiful food porn!

Somehow I missed this post....looks really good Imelda! So when you said "coffee rolls" you meant rolls made with coffee that can be served with coffee.... Did you mix the coffee powder with sugar like you do when you use cinnamon? Interesting.Breakfast thread for August - Page 2 (49)

I go to the egg farm and they have eggs from medium to super jumbo, most of the jumbos are double yolkers and are $2.40 a dozen and fresh daily. They are so huge that the egg crate won't close -- rubber bands are supplied to hold the cartons shut. I buy extra large for baking and the jumbos for our breakfasts. I like breakfast casseroles and was about to make a dinner casserole with some leftover chicken and thought I had all the ingredients but didn't have most of what was needed. So I made up a recipe using cheese, eggs and chicken plus several pantry ingredients and it was pretty good. So I served it, next day, for brekkie and we decided we liked it then, too. I'm calling it Mexican Souffle, and Barb will roll her eyes, because it's just sort of reminds one of Mexican flavors -- sorta like Spanish Rice. LMAO

MEXICAN SOUFFLE Breakfast thread for August - Page 2 (59)

3 cups shredded chicken (could use ground beef or ham too)
5 eggs
12 oz. shredded cheddar or Mexican blend cheese
1 can Rotel tomatoes
1 - 14.5 oz. can of creamed corn
1 - 10.5 oz. can of cream of chicken soup
1 pkg. Jiffy corn bread mix

Put all ingredients in a large mixing bowl except 4 oz. of the shredded cheese (reserved for top of casserole) and mix until well blended.
Bake in a preheated 350 degree oven for 40-60 minutes, or until middle is set and lightly browned. Remove from oven and top with remaining cheese, return to oven and bake 5-10 minutes or until cheese is melted. Serve with sour cream and salsa, if desired.

For brekkie, we normally have a pastry and cottage cheese OR yogurt OR eggs and toast. Hubs has oatmeal sometimes that he does in an 8-cup Pyrex batter bowl in the microwave -- it makes 2-3 servings and I have some large plastic mugs with lids that he uses to hold the remainder to re-heat. I love oatmeal but sometimes I feel like it lays in a big wad in my gullet -- so I don't often have it for breakfast. Cold cereals are reserved for snacks around here and we go in cycles with it -- currently in an off-cycle. My favorite hot cereal is cocoa wheats!!!

Your breakfasts sound like mine, Pea. Strange, but the older I get the more my body requires protein first thing in the morning...fuel to get going, I guess. Actually, I think I eat more protein now than I did when I was younger. Of course, I probably eat more carbs and vegetables as well - but I just don't mention that part. LOL

I want to make egg omelets tomorrow morning, but I think I will make them now, and when they cool...wrap them in foil. Tomorrow morning I can just pop them in the toaster oven to heat them up.

I just hate building omelets early in the AM when I'm half asleep and on the internet looking at the news and havin that first cup of coffee.

I want seeded and chopped tomatoes, ham diced; cheese; mushrooms and green onions in mine. Toast will be made fresh though! Gotta have tabasco sauce on mine. Yummy!

I told Brian I would make him a hearty breakfast tomorrow, one I've never made before.

Homemade biscuits made into a sandwich with a scrambled egg, sliced, sauteed Jimmy Dean Hot Sausage and some melted gruyere cheese. And of course, coffee and chicory and orange juice. And that Tabasco bottle will be nearby on the table!

I'm out of fresh tomatoes (though I could open a jar of the Creole tomatoes I canned to use a nice fresh homegrown tomato) and also out of smoked red bell peppers, either of which would add a great flavor to our egg/sausage/cheese biscuits. They'll look like I made them for Dagwood before I'm finished.

If you want to go one more step to take it over the top.....

Use a bit of that Jimmy Dean Spicy sausage for a small amount of sausage gravy, make the sandwiches open-face and spoon the gravy over the melted cheese...or under the melted cheese, as you wish.

I use that sausage for my gravy....best tasting and reasonable in price.
